Banana Sambuca Sundae

This is a grown up version of the ice-cream sundaes that you remember from childhood. It’s a sort of Eton Mess meets Banana Split! Easy to make and even easier to eat. This does work best and looks good too, if you use Sundae dishes - you get to see the layers.

  1. 3 small meringue nests

  2. 1/2 tub of vanilla ice-cream

  3. 2 bananas, chopped

  4. Handful of toasted almonds

  5. A drizzle of Banana Sambuca

  6. 2 squares of chocolate - works best with thin, large squares

  1. Toast the almonds in advance in the oven - takes about 10 minutes at 200C.

  2. Crush a couple of meringues into bite size chunks - how many depends on what you have bought, but you need the equivalent of about two handfuls when crushed.

  3. Layer meringue, ice-cream and bananas until you reach the top.

  4. Drizzle with the banana sambuca, careful this is powerful stuff.

  5. Now serve with sprinkled toasted almonds and a corner of chocolate

Serves: 2

Preparation Time - 5 minutes

Cooking Time - none required

Be careful not to over do the sambuca it's not so strong in terms of alcohol. But It has a very strong  flavour.
