Brandy and Apricot Flapjacks


  1. Turn on the oven to 200C.

  2. Grease a baking tray with butter.

  3. Melt the butter, sugar, syrup and brandy in a non-stick saucepan.

  4. Thoroughly stir in the oats and apricots.

  5. Press the mixture into the tray and score into squares.

  6. Bake in the oven for 40 minutes.

  7. Allow to cool just long enough for you not to burn your fingers when you eat one with your cup
    of mid-morning or afternoon tea.

Sometimes you just need a smackeral; a biscuit won’t cut it, a cake is just too much, a sandwich is too savoury and so what fits the bill? A flapjack is exactly the kind of smackeral that will fill a hole until the next meal. As this is Bottles & Cans, this is not going to be any ordinary flapjack. To make sure you get some of your five a day, we have some apricots and a generous serving of brandy just because the two things go so well together.




  1. 270g oats

  2. 125g butter

  3. 125g soft brown sugar

  4. 3 tablespoons golden syrup

  5. 2 shots of brandy

  6. 120g dried apricots, chopped
