Gorgeous Ice-Cream
This heavenly ice-cream was inspired by the Gorgeous Brewery Gravedigger Vanilla Stout that my husband came home with from Craft Beer Rising 2019. One swig and I was hooked, and immediately began working on a recipe to use this scrummy beer. The combination of Gravedigger, with the squidgy brownies and all that delicious cream is a sure fire hit with the grown-ups at any summer bash.
Ingredients

500ml whipping cream, cold

260ml sweetened condensed milk

100ml Gorgeous Brewery Gravedigger Vanilla Stout

180g chocolate brownie squares, cut into quarters

Serves 8
Preparation time: 15 minutes
Freezing time: Minimum 8 hours
Directions

In a large bowl, combine together the condensed milk and the stout; mix thoroughly.

Whip the cream until stiff peaks form (takes about 2-3 minutes).

Add the whipped cream and chopped brownies to the bowl with the condensed milk and the stout, gently folding in with a spatula until the ingredients are fully incorporated with each other.

Don’t get too carried away with the stirring as this will deflate the whipped cream and ruin the consistency of the ice-cream; gentle folding is required.

Pour the mixture into a oven dish.

Cover the ice-cream with parchment paper, and press it down gently to make contact with the mixture. This will prevent ice crystals forming on the surface of the ice-cream.

Place in the freezer for at least 8 hours.

Serve with raspberries.
