Pale Ale and Pesto Pizza

Pizza is a perfect soakage food, but also it never tastes better than when it is made fresh and by your own fair hand. As usual, we do make the most of some of the short cuts available to make your life a little easier. We found the combination of pale ale and pesto is a match made in heaven. We think you will agree and as with any pizza recipe, you can personalise it to suit your specific flavour preferences.



  1. 1 pack of pizza dough mix

  2. 100g mushrooms, sliced

  3. 1 small green pepper, sliced

  4. 1/2 a red onion, sliced

  5. 30g pine nuts, toasted

  6. 1 tablespoon plain flour

  7. 200ml pale ale - pick the flavour that you like the most

  8. 150g mature grated cheese 

  9. 6 teaspoons of green pesto

  10. Salt and pepper to taste


  1. Preheat the oven to 200 C.

  2. Place the pine nuts in a small saucepan. On a medium heat, stir with a wooden spoon until brown. Do not stop stirring or they will burn. When toasted, place in a small bowl to cool and put aside for later.

  3. Follow the instructions on the pizza dough mix packet.
    On the one used in this recipe, we replaced the milk with pale ale. Check to see if the amount differs.

  4. Top tip - when you add the ale to the mix, stir in with a wooden spoon and when fully mixed it will appear to be sticky. Don’t panic. Take a cutting board and dust with flour. Spoon the dough onto the board. Dust with flour and fold it into the dough with a knife. Very soon it will settle down and then you can either roll it out or use your knuckles and palms to hand press it to size.

  5. Leave the base to one side and prepare the vegetables.

  6. Cooking tip - transfer the base onto a cooking mesh.
    Place the mesh over the base. Flip and gently remove the cutting board.

  7. Cover the base evenly with the pesto.

  8. Arrange the vegetables and then add the pine nuts
    and cheese.

  9. Cook on the mesh for 12-15 minutes. Using the mesh allows the base to be nice and evenly cooked)

  10. Salt and pepper to taste and enjoy!
